Gooey Date Squares (Vegan, No Sugar Added, Dairy Free, Gluten Free)
Let’s start off with a poll! Which snack do you think is healthier?
Option 1: A dessert with 16.5 grams of fat, 260 calories, and 24 grams of sugar.
Option 2: A handful of cinnamon covered walnuts and 1.5 dates drizzled with less than half a teaspoon of coconut oil and a few unsweetened coconut flakes.
Seems pretty obvious right? Option #1 is probably a (delicious) dessert made up of refined sugar, flour, and maybe even some hydrogenated oils. Eek. While Option #2 seems like a pretty healthy, natural snack (with maybe the exception of the oil).
Well guess what! Option #1 is these Date Squares and Option #2 is these Date Squares. The same thing! By eating these Squares you’re really just enjoying a fruit and nut based snack, or alternatively, you could trade those calories in for a stack of processed Oreos. And this is why I believe counting stats can be misleading. Interesting, right?
But enough of my “ingredient based nutrition” lecturing! Let’s get to the dessert! *And please note I still call this dessert, and think it should be enjoyed in moderation, as compared to vegetable consumption. I gotchu microbiome!
I am really excited to share this recipe with everyone, because it’s my personal favorite dessert. I think I keep saying that each time I make something new, but nonetheless, F-A-V-O-R-I-T-E. Plus it comes with a lot of sweet perks. These Date Squares are:
- No bake (who needs ovens anyways)
- Gluten free
- Dairy free
- No sugar added (only whole fruits), and I personally believe they taste as good as any refined sugar dessert I’ve ever had
The only tricky thing about ’em is that they are a little hard to transport. They don’t bind together well once out of the cold for too long. But we all know people do crazy things in the name of dessert…(I’m the type of person that used to stuff a cupcake in my purse when leaving a wedding)…so I don’t think that’ll be too much of a problem.
