Here’s what’s so fabulous about potatoes. Unlike many a side-dish, potatoes simply don’t discriminate. They’re willing to step up at breakfast, lunch, or dinner. Need something to pair with your eggs? Don’t sweat, think roasted, sautéed, or hashed potato. Want something creamy in your bed of greens for lunch? Roasted potatoes got your back. Need a good side for dinner? Potatoes got that too. If you need a break from wheat, turn to potatoes – they get me through my carb craving every time.
My personal favorite time for potatoes is at breakfast. They take a little bit of time, so they’ve become my weekend morning comfort food. There’s nothing like cutting a sunny-side up egg over a bed of crispy potatoes!
