Vegan Chili with a Dollop of Vegan Sour Cream
The Super Bowl was just on this weekend, meaning I’m jumping on that vegan chili bandwagon! Want to join me? If so, get ready because this is SO good. And that’s coming from a die hard fan of football watching + chili eating.
Chili conjures up the fondest of east coast memories for me. It makes me think of super cold January nights, snuggled up next to the fire place, listening to my dad
cheering usually yelling at the Ravens. My mom had a chili recipe that would make the whole house smell delicious and the anticipation was almost as good as swirling in the chips, cheese, and sour cream before taking a big delicious bite.
^^That makes me laugh. Because here’s what my football chili bowl was like this year now that I’m on the west coast: I watched the Super Bowl in broad day light, with the windows open in a short sleeve shirt as the 70 degree fresh air filled the apartment, all with a bowl of meatless chili on my lap, as my new foster dog freaked out. Am I really in the same country? Wait, am I really even the same person?!
All that aside…despite its meatless status, this chili is super hardy with just the slightest kick of spice. And a swirl of vegan sour cream (which in all honesty tastes nothing like sour cream, but is delicious nonetheless) takes the flavor in this bowl to a whole new level.
